Sagittario Extra Virgin Olive Oil is produced in the hills just outside of Florence, easily distinguished for its fruity olive fragrance and flavor.
Four main varieties of olives grow in this area at the climatic limit of survival for these ancient mediterranean trees.
The Frantoio (or Correggiolo), Leccino, Moraiolo and Pendolino differ in resistance to disease and cold, maturation period, yield and taste. The early hand-harvesting and prompt cold pressed extraction of this combination of olives produces an oil renowned for its extremely low acidity (0.2% – 0.5%) as well as its characteristic “alive” taste.
